.mini monday & recipe.

Honey Granola




2C Oats
1/2C Almonds
1/2C Toasted Shredded Coconut (Mine was from a previous recipe and that's why it was toasted...you don't have to have it toasted)
2tsp Cinnamon
1tsp Nutmeg
1C (light packed) Brown Sugar

Mix all these ingredients together. In a sauce pan combine the following:

1/2C Honey
1 1/2tsp Vanilla
2Tbs Butter

Heat on med/low until ingredients are all mixed and the honey is more liquidy. Then combine with dry ingredients. Mix well and until everything is coated. 

Then spread granola on a cookie sheet (I would use one with a slight lip so the granola doesn't fall off when you stir it). Place in the oven at 330 F and cook for about 30min. Stir every ten minutes. (It may take slightly longer. Just keep an eye on it and once it becomes a light golden brown take it out.) Let sit for about ten minutes (or until cool) and there you have it! It is addictingly good.

The great thing about granola is that you can change it up however you want. Sometimes I make it an don't put any Nutmeg. Sometimes I put extra Vanilla. Sometimes I throw in some Cardamon  Really it's up to you and your taste buds.

  2.  Also, did you change how to do comments? I can't figure out how to make it work like I used to, with the picture showing up w/ a link to my blog and without my last name. I'm somewhat computer illiterate.

  5. That was my problem too! Tried some granola recipes and they were way to complex and not that great! This one I honestly just made by throwing stuff I already had on hand together. Ha! Can't get much easier than that. :P Let me know if you like it!
