fourth of july


yay for short work weeks! and for blowing stuff up! and for time with family! and for delicious food! hoorah!
what do you guys have planned? this year we are spending it with kyle's side of the family. they have a bunch of property where we'll spend the day grilling and playing games and blowing stuff up. it's gonna be a blast. (pun intended)

to welcome in summer (and one of the best holidays of the year), i made some popsicles. these are super tart and delicious and easy. just the way a popsicle should be. after i made them, i realized i could have used yogurt instead of coconut, for extra creaminess,....but i'm such a sucker for coconut!
either way, you're gonna want to make them. like now.


to make
blend strawberries with a bit of sweetener (honey or sugar) and add to bottom on popsicle mold
then add a layer of sweetened coconut milk (or vanilla yogurt!)
and lastly, add a later of blended blueberries (also with a bit of sweetener)
give one or two stirs with a toothpick (you don't want it all mixed together, just swirled a tad)
freeze over night
enjoy
